The term "flambé" specifically refers to a culinary technique that involves igniting alcohol in a dish to enhance its flavors and create a dramatic presentation. The process typically involves adding a spirit, such as brandy or rum, to a dish that is already hot, and then carefully lighting the alcohol. This not only improves the flavor profile by burning off some of the alcohol and adding a complex depth to the dish, but it also creates a visual spectacle as the flames rise.

This technique is often used in desserts like Bananas Foster or in savory dishes such as coq au vin, where the flames can bring out different aromas and enhance the overall dining experience. It is important that this technique is executed with care to ensure safety, and it is typically performed in front of guests to enhance the entertainment value of the meal.

The other options, while related to cooking and preparation, do not accurately define flambé. Grilling involves a direct heat source but does not relate to igniting alcohol. Marinating is a method used to infuse flavors into food prior to cooking, which is distinct from flambéing. Serving food dramatically can encompass a variety of presentations but does not involve the ignition of alcohol.
